It doesn't matter if your calories come from fat, from protein, or from carbohydrates: if you consume more calories than you burn, those excess calories will convert to fat.&lt;br /&gt;&lt;br /&gt;That being said, it's never a good idea to cut all calories of (x) given type out of a diet. Whether you're trying for low-carb, low-fat, or reduced-protein, unless you have specific medical reasons for cutting certain items out of your diet, work toward balance.&lt;br /&gt;&lt;br /&gt;A good balancing point for many -- not all, not even most, but many -- people is 15/35/45: no more than 15% of your calories for a given day (or, if you want to be strict, for a given food item or meal) should come from fat, no less than 35% of your calories should come from protein, and no more than 45% of your calories should come from carbohydrates.&lt;br /&gt;&lt;br /&gt;And remember, both carbohydrates and protein contain 4 calories per gram, while fat contains 9 calories per gram. That being said, while 3 grams of fat doesn't sound like a lot, if your morning snack totals 100 calories, almost 30% of those calories are from fat.&lt;br /&gt;&lt;br /&gt;And don't forget, vegetarian doesn't always mean low-fat. Percentage of Calories from:&lt;br /&gt;Fat 6%&lt;br /&gt;Protein 54%&lt;br /&gt;Carbs 40%&lt;br /&gt;&lt;br /&gt;But the total quantity of fat isn't the only thing to consider.&lt;br /&gt;&lt;br /&gt;Remember, saturated fats and trans fat are the most harmful to the body. According to the New England Journal of Medicine and the Nurses' Health Study, both saturated and trans fats are proven contributors to Coronary Heart Disease, and both have deleterious secondary effects, as well. Both fats raise HDL ("Bad") Cholesterol, but trans fat also decreases the level of LDL ("Good") Cholesterol. Gram for gram, both saturated and trans fats are far worse for you than unsaturated fats.&lt;br /&gt;&lt;br /&gt;A quick litmus test for saturated v. unsaturated fats is their room temperature response: if the fat remains solid at room temperature, it's most likely saturated.&lt;br /&gt;&lt;br /&gt;Unsaturated fats, on the other hand, remain (or become) liquid at room temperature. Both Polyunsaturated fats (such as those found in corn, soybean, and sunflower oils) and Monounsaturated fats (found in olive and canola oil) are far healthier than their saturated counterparts. Polyunsaturated fats are also found in fish, fish oil, and many edible seeds, while Monounsaturated fats are found in olives, avocados, and most nuts.&lt;br /&gt;&lt;br /&gt;How does this impact what you eat? Simple: look at the labels on what you purchase, and look up nutritional information for your favorite fast foods. &lt;br /&gt;&lt;br /&gt;Every now and then, I crave box of greasy, salty fries, and thanks to sites like Fitsugar (http://www.fitsugar.com/768546) and A Calorie Counter (http://www.acaloriecounter.com/fast-food.php), I know that it's safer to get my fix at Sonic than it is at Jack in the Box.&lt;br /&gt;&lt;br /&gt;And yes, you heard me right: I indulge in my cravings every now and then. If you deny yourself everything you crave, or everything you enjoy, then you will -- in all likelihood -- backslide. Trust me, I know. I went from 370 pounds to 170, then told myself I could finally start having my favorite foods again. In less than a year, I was back up to 250.&lt;br /&gt;&lt;br /&gt;So now, along with watching what I eat and exercising, I also allow myself a 'cheat day' every week. I'll get a burger from McDonald's, a burrito from Taco Bell, or have lunch at a pizza buffet.&lt;br /&gt;&lt;br /&gt;Ultimately, the most important thing to remember in any weight loss plan is to pay attention to what you eat. I truly, truly like wine. Unless a wine is execrable in every way, I firmly believe that there's a little bit of joy in every bottle.&lt;br /&gt;&lt;br /&gt;Today's offering is a 2006 Chilean Cabernet Sauvignon from Calina Reserva. It advertises itself as possessing "concentrated ripe fruit, dark cherry and peppery flavors," with "smooth tannins and a long finish."&lt;br /&gt;&lt;br /&gt;The wine was a touch tight when I removed the cork, so I used my &lt;a href="http://www.vinturi.com/"&gt;Vinturi&lt;/a&gt; to open up a glass, assuming I could decant the rest or simply let it breathe in the bottle. Introducing aeration via the Vinturi, however, brought a number of unsatisfying notes to the fore.&lt;br /&gt;&lt;br /&gt;To be fair to the wine, I waited an hour before my second glass. I decanted a portion, and allowed the rest to breathe in the bottle. Unfortunately, like a number of relationships, time and familiarity did not improve the situation.&lt;br /&gt;&lt;br /&gt;In all honesty, it's not a &lt;i&gt;bad&lt;/i&gt; wine, it's simply not a &lt;i&gt;good&lt;/i&gt; one.&lt;br /&gt;&lt;br /&gt;The tannins are agreeably soft, and the wine is not noticeably astringent; however, when I think of a Cabernet, I think of rich, chewy tannins, and a luxurious sweep of flavour across my tongue, and this doesn't meet that mark. The finish is smooth and lingers a bit, but it doesn't make itself known much beyond the quarter-minute mark. There is a touch of swift-fading peppery heat and a faint hint of chalk at first sip, but both are severely overpowered by the sweetness of the wine. As to the nose, it's primarily boysenberry and pine: very fruity, but it has an aroma reminiscent of breakfast syrup. The colour is gorgeous -- it looks like crushed burgundy velvet -- but there are no legs to speak of.&lt;br /&gt;&lt;br /&gt;Calina usually does a decent job of blending its sourced grapes, but in this case, I find the wine to be a bit too flabby, and a bit too sweet. I've dealt with some surgery issues that left me unable to enjoy gourmet food or imbibe any of the hundreds of wines sitting in my cellar. Still, that doesn't mean that I've been sitting -- or, in this case, lying -- idle.&lt;br /&gt;&lt;br /&gt;As we keep vacillating between &lt;60° and &gt;100° Fahrenheit days, we need food that will carry us through both extremes. For that, I offer the following: Chilled Cheddar Pie.&lt;br /&gt;&lt;br /&gt;One word of warning, though: you have to &lt;i&gt;really&lt;/i&gt; like cheese ...&lt;br&gt;&lt;br&gt;&lt;u&gt;The Ingredients&lt;/u&gt;&lt;ul&gt;&lt;li&gt;2 Cups grated sharp Cheddar cheese: if you can find it, the &lt;a href="http://tillamookcheese.com/OurProducts/Cheese/Vintage_White_Extra_Sharp_Cheddar.aspx"&gt;Tillamook Vintage White Extra Sharp&lt;/a&gt; is the best ... not just for this recipe, but in the &lt;i&gt;world&lt;/i&gt;&lt;/li&gt;&lt;li&gt;4 Extra Large Eggs&lt;/li&gt;&lt;li&gt;1/4 teaspoon Cayenne or Chili Pepper&lt;/li&gt;&lt;li&gt;2 Cups Heavy Cream&lt;/li&gt;&lt;li&gt;9-10" Pie Shell&lt;/li&gt;&lt;li&gt;Salt and Pepper to taste&lt;/li&gt;&lt;/ul&gt;&lt;u&gt;The Preparation&lt;/u&gt;&lt;ul&gt;&lt;li&gt;While the oven is preheating to 425° F, grate the cheese with the medium size holes in a box grater - it's easiest if the cheese is thoroughly chilled beforehand&lt;/li&gt;&lt;li&gt;In a large -- and preferably chilled -- glass bowl, gently beat the four eggs, and fold in the heavy cream&lt;/li&gt;&lt;li&gt;Once the eggs and cream have incorporated fully, fold in the Chili or Cayenne pepper&lt;/li&gt;&lt;li&gt;Incorporate the cheese into the cream and egg mixture, then taste -- yes, it's raw egg, but a microscopic taste &lt;strike&gt;won't&lt;/strike&gt; shouldn't kill you -- and add salt and pepper to season&lt;/li&gt;&lt;li&gt;Gently pour the mixture into the pie shell: if you use a 9" shell, it will come up to the edge of the shell, so make sure you have a drip pan underneath to catch any spatters&lt;/li&gt;&lt;li&gt;Bake the pie for 20 minutes, until it appears as though it's beginning to set, then lower the temperature to 300° F and bake an additional 20 minutes&lt;/li&gt;&lt;li&gt;Test the pie after the second 20 minute interval by inserting a knife into the center: if the blade is clean upon removal, the pie is done&lt;/li&gt;&lt;li&gt;If the pie needs more time, test every five minutes until the pie is ready&lt;/li&gt;&lt;li&gt;If the edges of the crust begin to brown, cover them with aluminum foil, leaving the center open for the pie to continue to cook&lt;/li&gt;&lt;li&gt;Remove the pie from the oven and place onto a cooling rack once finished&lt;/li&gt;&lt;/ul&gt;The pie can be served warm on cool days, and can be served cold on the hottest of days. I enjoy the taste of blue-rare steak and well-charred ribs, brisket that's been smoked to fork-flake tenderness, grilled salmon and pan-seared trout, and a rack of lamb succulent with juice and redolent with herbs. By the same token, there's nothing quite so satisfying as the first crunch of a cold Pippin apple or a crisp Bosc pear, couscous and rice hold a strong place in both my heart and my pantry, oatmeal with cranberries is a marvelous comfort food, and an arugula and spinach salad topped with candied walnuts and fresh mushrooms goes well with almost any meal.&lt;br /&gt;&lt;br /&gt;Because I am an omnivore, and also a foodie, I've tried various vegetarian offerings for meat replacements. No, not because I'm giving up meat -- far from it -- but because I want to continue to expand my horizons. I'd found, unfortunately, that while some animal protein replacements were moderately tolerable, most of the vegetarian options I'd tried had been less than appealing. Lately, though, I stumbled across a rather delectable exception to that rule.&lt;br /&gt;&lt;br /&gt;The greater part of &lt;a href="http://www.lightlife.com/index.jsp"&gt;Lightlife&lt;/a&gt;'s brand of vegetarian products is exceptionally tasty, and they have a benefit many of the other replacements don't: they have low to no cholesterol, and they're either low in fat or completely fat free. Now, in the sake of full disclosure, I have to say that their hot dogs are not the best I've ever had; however, both their Smart Ground beef replacement and their Gimme Lean faux sausage is quite good, and I love their Smart Chili and Smart BBQ. Unfortunately, the lighter proteins -- poultry, for example -- don't seem to translate as well as the beef and sausage replacements. Oh, they're good enough for use in recipes, and Lightlife's breaded nuggets and stuffers are quite flavorful, but I personally wouldn't use their turkey substitute in a sandwich.&lt;br /&gt;&lt;br /&gt;All that being said, I feel it's important to experiment with your food choices. After all, it's how I discovered that I like pistachios, and it may give you the opportunity to find a heretofore undiscovered treasure. Whether pastas, breads, rice or potatoes, I adore carbs in all their warm, gooey glory. Occasionally -- even though I often prefer  a clean, uncluttered flavor -- I get the urge to make something sinfully rich and obscenely heavy. When that urge hits, I usually wind up making Stollen.&lt;br /&gt;&lt;br /&gt;While traditionally a Christmas dessert bread, Stollen has been gaining popularity outside of the holiday traditions. Although the exact recipe used varies from maker to maker, one constant remains: it relies on candied fruits for its dense, sugar-rich appeal. When I make it, I prefer to use a mixture of candied and preserved fruit in order to cut down on what can become cloyingly sweet.&lt;br /&gt;&lt;br /&gt;1/4 c candied cherries&lt;br /&gt;1/4 c candied citron&lt;br /&gt;1/4 c raisins or Zante currants&lt;br /&gt;1/4 c dried apricots, diced&lt;br /&gt;1/4 c candied lemon peel&lt;br /&gt;1/4 c candied orange peel&lt;br /&gt;1 T fresh lemon zest&lt;br /&gt;1/2 c dark rum&lt;br /&gt;1/2 c castor sugar&lt;br /&gt;1/4 t salt&lt;br /&gt;3-4 c high-protein flour&lt;br /&gt;1 pkg dry yeast&lt;br /&gt;1/4 c toasted almonds&lt;br /&gt;1/4 t almond extract&lt;br /&gt;1/2 c whole milk&lt;br /&gt;1/2 c butter&lt;br /&gt;3 eggs&lt;br /&gt;&lt;br /&gt;In a glass bowl, combine all of the fruit and the candied peel, and pour over it the rum. I've found that Cruzan Black Strap holds up quite well, and it lends a delicious hint of chocolate to the mix. Cover the bowl with cling film and place in the refrigerator for 12-48 hours.&lt;br /&gt;&lt;br /&gt;When ready to make the Stollen, combine the yeast with 1 t castor sugar and 1/4 c warm water. Make sure the water's approximately 110° F, so that the yeast will bloom. The bloom usually takes about 10 minutes, depending on the warmth of the water, and the ambient temperature of the room.&lt;br /&gt;&lt;br /&gt;While the yeast is blooming, take the fruit out of the refrigerator and strain it through a fine-meshed sieve or cheesecloth. Retain the rum, and place the fruit on clean lint-free kitchen toweling or paper toweling. Do not squeeze the fruit, but allow any excess rum to separate naturally. At this time, melt the butter either in the microwave or in a small saucepan on the stove.&lt;br /&gt;&lt;br /&gt;In a separate bowl, combine the melted butter, the milk, the eggs, the retained rum, the sugar, the salt, the almond extract, the yeast, and 1/2 c warm water, mixing well. Add to this the flour, and mix until a soft dough is formed. You want the dough to be smooth, not tearing: that indicates that you've over-mixed it. I prefer high-protein flour because I've found it to offer a chewier, heavier texture which fits the nature of this bread.&lt;br /&gt;&lt;br /&gt;Turn the dough out onto a lightly-floured board or countertop and knead for five minutes. If the dough remains sticky, add more flour to the board and gently work it in. As you knead, fold in the candied fruit, the lemon zest, and the almonds, incorporating them as evenly as possible.&lt;br /&gt;&lt;br /&gt;Take yet another bowl -- the largest one yet -- and lightly oil the inner surface. Work the dough into a ball and roll it in the bowl until the entire surface has been covered with oil, then cover the bowl with a sheet of waxed paper and a clean kitchen towel and leave it to rise in a warm area until it has approximately doubled in size.&lt;br /&gt;&lt;br /&gt;Once the dough has doubled, punch it down, then separate it into two equal portions. Roll out each portion into 10" x 8" rectangles, approximately 1/2" thick. Fold the Stollen into uneven thirds lengthwise: the center section will be approximately 4", with each folded 'flap' approximately 3". There should be an inch overlap in the center. Pinch the seams firmly so they don't separate when raising or baking. Place the Stollen on a Silpat or parchment paper covered baking tray, and brush it with more melted butter, then allow to proof in a warm place until it has approximately doubled in size.&lt;br /&gt;&lt;br /&gt;When the bread is ready, preheat your oven to 375° F and bake the Stollen until golden brown, approximately 30-45 minutes. Oh, we've made some important strides toward health improvement: we've added vitamins to our soda, supplements to our sugared cereals, Omega 3 oils to our artifical butter-flavoured butter substitutes, and bumped up the protein levels in our pre-packaged desserts, but we still don't have quite the same grasp of healthy cooking other cultures seem to take for granted.&lt;br /&gt;&lt;br /&gt;I say this as a lead-up to a guilty pleasure: I enjoy watching cooking shows when I'm unable to cook, as I'm saved from the immediate desire to try new things, but I can still get vicarious pleasure from envisioning how a completed dish will taste. Then, too, every now and then I'll hear something that ties in with my degree in History -- or just my twisted sense of humor -- and I'll wind up giggling uncontrollably.&lt;br /&gt;&lt;br /&gt;I adore watching Ming Tsai cook, in part because he's got an incredibly sharp wit, and in part because of his phenomenal skill with food. And, occasionally, he'll say something that makes me laugh at its double-meaning. Yes, yes, diet and exercise are the devil, but if you're careful in how you choose to recreate your food, you can do so without sacrificing taste or texture.&lt;br&gt;&lt;br&gt;For example, a typical American may grab a &lt;a href="http://www.mcdonalds.com"&gt;McDonald's&lt;/a&gt; Egg McMuffin for breakfast on the way to work, and why not? It's fast, convenient, and fairly tasty. I should know: for almost a decade, it was how I started my morning. But what's in one? An English Muffin, an egg, a slice of American cheese, a smear of margarine, and a slice of Canadian Bacon (or ham). Moreover, what are the &lt;a href="http://app.mcdonalds.com/bagamcmeal?process=item&amp;itemID=46"&gt;Nutritional Statistics&lt;/a&gt; for said item? Well, while the protein and carbohydrates are in reasonable balance, there's a &lt;i&gt;lot&lt;/i&gt; of fat for one meal -- almost 20% of the daily total, based on a healthy person with a 2,000 calorie diet -- and the cholesterol is almost 90% of the daily total. But how to drop the unhealthy elements without sacrificing taste?&lt;br&gt;&lt;br&gt;I start with extra-crisp sourdough English Muffins, and the Incredible Egg brand of egg substitute. I also use fat-free American cheese and lean ham. Cook the egg substitute while the muffin's toasting, then lay a slice of cheese on one side of the muffin, and place the egg substitute on top to start it melting. Sear the ham for a few seconds on both sides in the egg pan, and lay it on top of the eggs, then top with the other half of the muffin. If you choose, you can use a smear of fat-free margarine on the side of the muffin with the ham.&lt;br&gt;&lt;blockquote&gt;&lt;i&gt;A McDonald's Egg McMuffin contains 300 calories, 12g of fat, 5g of saturated fat, 260mg of cholesterol, 820mg of sodium, 30g of carbohydrates, 2g of dietary fiber, and 18g protein.&lt;br&gt;&lt;br&gt;My version contains 205 calories, 2g of fat, 0g of saturated fat, 6mg cholesterol, 735mg sodium, 29g of carbohydrates, 1g of dietary fiber, and 16g protein.&lt;br&gt;&lt;br&gt;So yes, you're giving up 1g of carbohydrates and 2g of protein by using my recipe, but you're also giving up 95 calories, 10g of fat, 5g of saturated fat, 254mg of cholesterol, and 85mg of sodium; and, if you add back in one cup of fat-free milk (90 calories, 0 fat, less than 5mg of cholesterol, 13g of carbohydrates, 9g of protein), you're more than making up the carbohydrates and protein, and you're &lt;u&gt;still&lt;/u&gt; coming in 5 calories shy of the Egg McMuffin on its own.&lt;/i&gt;&lt;/blockquote&gt;&lt;br&gt;Here's the big question, though: how does it taste? While I'm admittedly biased -- it is, after all, my own cooking -- it's safe to say that I'm quite reasonably pleased with the substitutions. The taste is nearly identical, with the main difference in the muffin: the extra-crisp sourdough is a bit tangier and less bready than the muffins McDonald's uses. As well, if you want to brighten the flavor of the eggs, you can always use herbs to enhance them, and fat-free Swiss is an excellent change of pace from the fat-free American.&lt;br&gt;&lt;br&gt;Experiment with your food: I cannot stress that enough. Have fun, play, and learn what you can do to make your favorite meals remain tasty while becoming healthier. As her subtitle notes, in "365 days, 524 recipes, [and] 1 tiny apartment kitchen," she cooked, laughed, swore, and learned. Along the frequently wild ride, we're given glimpses of her, her family and friends, and Julia and Paul Child.&lt;br /&gt;&lt;br /&gt;I cannot remember when I have last enjoyed a book so much. Even were I not already enamored of Julia Child's warmth and humor -- not to mention her culinary expertise -- I would have fallen in love with the ideal from reading Julie's book. Northwood</name><uri>http://www.blogger.com/profile/12406717355407210054</uri><email>noreply@blogger.com</email><gd:image rel='http://schemas.google.com/g/2005#thumbnail' width='21' height='32' src='http://4.bp.blogspot.com/_trmAYCKWpTc/SQ5hiqKxQVI/AAAAAAAAAKI/tywbkamt3PE/S220/_MG_3504.jpg'/></author><thr:total>0</thr:total></entry><entry><id>tag:blogger.com,1999:blog-4022135323507495764.post-6453302834155289336</id><published>2007-12-16T15:31:00.000-08:00</published><updated>2008-08-15T09:00:41.591-07:00</updated><title type='text'>Baklava, humbug</title><content type='html'>Who needs Christmas Cookies when you can have Baklava?&lt;br /&gt;&lt;br /&gt;Unlike cookies (and pies, and most other dessert dishes), Baklava relies on sheets of phyllo dough -- dough made from unleavened flour -- for its base, and the final product resembles a light, airy, exceedingly sweet puff pastry.&lt;br /&gt;&lt;br /&gt;For this dish, you'll need the following:&lt;ul&gt;&lt;li&gt;1 package phyllo dough&lt;/li&gt;&lt;li&gt;1.5 c butter&lt;/li&gt;&lt;li&gt;1 1/2 tsp cinnamon&lt;/li&gt;&lt;li&gt;1 lb chopped walnuts&lt;/li&gt;&lt;/ul&gt;For the glaze, you'll need:&lt;ul&gt;&lt;li&gt;1 c water&lt;/li&gt;&lt;li&gt;1 c caster/superfine sugar&lt;/li&gt;&lt;li&gt;1/2 c honey&lt;/li&gt;&lt;li&gt;1 t pure vanilla extract&lt;/li&gt;&lt;/ul&gt;While your oven is preheating to 350 degrees, gently unroll the phyllo dough, then cut it in half: this will allow it to fit a 9 x 13 glass dish (almost) perfectly. Don't forget to cover the unused dough with a dampened towel while you're working, though, or it will rapidly dry out and become unusable.&lt;br /&gt;&lt;br /&gt;Mix the walnuts with the cinnamon and make sure they're fairly evenly coated. Butter your baking dish thoroughly, and make sure all the rest of your butter is melted. Now that your prep work is done, you can begin making the dessert.&lt;br /&gt;&lt;br /&gt;Lay a sheet of phyllo in the bottom of your dish, then -- using a pastry brush -- thoroughly butter it. Make five layers of buttered pastry, then sprinkle 2 Tbsp of the chopped walnuts on top. Now you repeat, five layers of phyllo then a layer of nuts until you run out of nuts, then top with the remainder of the phyllo. The top layer of the phyllo should be between 5 and 10 layers thick. Cut the baklava into squares, then drizzle any remaining melted butter over the top and bake for 45-60 minutes, or until the baklava is golden, and the edges of the squares begin to curl.&lt;br /&gt;&lt;br /&gt;While the baklava is baking, start the water boiling and add the sugar, stirring until the sugar is dissolved. Lower the temperature, then add the vanilla extract and honey and keep stirring at a simmer until the liquid has reduced to the consistency of a medium-thick syrup, between 20-30 minutes. Remove the baklava from the oven once it's done cooking and immediately spoon the syrup over the top, then allow to cool, uncovered, for a minimum of 30 minutes. In France, the cream is unpasteurized, so the bacteria has rather a great deal more to work with; however, in North America, most of the cream sold is pasteurized, so it needs a little help.&lt;br /&gt;&lt;br /&gt;Start with a 1:1 ratio of buttermilk and cream: use 1 Tbsp buttermilk to 1 c. heavy cream. Combine the two together and carefully heat to between 83-87 degrees on an instant-read thermometer, then pour into a clean glass jar or bowl. Partially cover the opening, then let sit at room temperature for up to 24 hours, allowing the crème fraîche to thicken. Once thickened, stir gently and place in the refrigerator, then let sit for 24 hours before use.&lt;br /&gt;&lt;br /&gt;Crème fraîche can be used in sauces, as a topping for fruit, to stretch and season scrambled eggs, as an addition to cream-based soups, as a whipped topping ... realistically, if you have a good imagination, it can be used just about anywhere. So go ahead, pick some up or try your hand at making it. I know food and drink, and heavens knows I consume enough of it, so I think it'd be a reasonable fit. And, inevitably, we've given advice that worked for us and didn't work for our listeners.&lt;br /&gt;&lt;br /&gt;How often have you told someone that a restaurant is lovely and the food is flavorful, only to have them tell you that their experience included rude service and horrible food? And let's face it: the opposite is true, as well. I can't count the number of times I've shied away from eating at an establishment that displeased me earlier, only to find -- thanks to a friend or co-worker -- that they have truly turned around.&lt;br /&gt;&lt;br /&gt;In some cases, however, it's more difficult to provide support or discouragement: what if the restaurant in question is owned by a friend? As a case in point, there's a small establishment I wanted to patronize because it's owned by a former co-worker; unfortunately, such was not to be.&lt;br /&gt;&lt;br /&gt;A month after opening, they still hadn't completed the painting, the carpeting was coming up in some areas, the host stand was showing unfinished plywood, and the lighting was exceptionally dim. Add to that a menu rife with misspellings, a wine list that indicated no understanding of food pairings, an executive chef more interested in glad-handing and greeting customers than in overseeing their kitchen, and a crew filled with slow wait staff and undertrained cooks. The service was pathetic, and the food was abysmal.&lt;br /&gt;&lt;br /&gt;My first meal there began with stale bread that appeared store-bought and a seafood-stuffed mushroom dish which tasted of nothing so much as soured artificial crab in motor oil-soaked cardboard. I also tried the Tuscan Bean soup, which reminded me of a taco cart's rather watery refried beans, only without the complexity of flavor brought forth via the cart's ambiance. My main course was a clam linguine with alfredo sauce: I'd never before had clams cooked until they become meal-filled rubber strips, and the pasta was surprisingly mushy in some spots while remaining exceptionally crunchy in others. The alfredo sauce tasted like cream of chicken soup ... condensed cream of chicken soup, fresh from the can, and before any additional liquid had been added. Needless to say, I was actually quite relieved that my dinner companion was called away from the table before we had to suffer through dessert. According to my friend, the desserts and pastries there were wonderful, but I was too horrified to try anything else. To be fair to the establishment, however, I went back three more times, hoping against hope that I'd have at least one good experience.&lt;br /&gt;&lt;br /&gt;The second meal provided me with a limp, stringy salad as an appetizer, and a carpaccio of beef that could only have been improved had they used catsup on it. The wine served was forgettable: a thin vinegar scent only hinted at the horror contained in my glass. I was worried at first that the wine was oxidized or that it had been corked, but after sampling a second bottle, I'm forced to admit that it was just a poorly-chosen wine. To be fair, I bear part of the embarrassment for that selection: I was, after all, the one who ordered it.&lt;br /&gt;&lt;br /&gt;The third meal was chicken. I skipped the appetizer. To say that the breast I was served was slightly dry is to say that the interior still needed a few minor touch-ups. The pasta was reasonably well cooked, and not overdone; however, the sauce served with the chicken was not what I had expected: I had ordered alfredo, and received pesto. When it was sent back to the kitchen, I received marinara in return.&lt;br /&gt;&lt;br /&gt;The fourth meal was my breaking point: after waiting nearly half an hour for my order to be taken, the waitress was rude and abrasive. When my fish came out, it was so dry that it squeaked when I attempted to cut it, and did not flake so much as snap and crumble. I asked if the waitress would take the meal back so that I could get a piece prepared properly, and was told that this was how the fish was prepared, and if I did not like it, I could patronize another establishment. Needless to say, I paid my check and left, planning never to return.&lt;br /&gt;&lt;br /&gt;I was informed about two weeks ago that the owners had made sure their servers were trained, made some changes to the restaurant, and had hired a new executive chef. I was not glowing with anticipation, but I agreed to accompany the friend who had first introduced me to this location for lunch.&lt;br /&gt;&lt;br /&gt;The plywood host stand was gone, but the walls still needed paint. The lighting had been improved, but the menu was still riddled with misspellings. The tables had been rearranged, but they were crowded together. Spare glasses and plates were now displayed in bookcases around the establishment, but the bookcases themselves were aesthetically unpleasant. Artwork was strewn around the walls, but the choices detracted from the atmosphere. Their new executive chef was their former pâtisserie chef -- at least the desserts would still be good -- but the fact that they were promoting rather than seeking outside assistance made me wonder if the rest of the staff was still the same. I felt tentatively hopeful, but I was -- luckily, as it turned out -- not expecting perfection.&lt;br /&gt;&lt;br /&gt;Once again, we had the seafood-stuffed mushrooms as an appetizer, but this time they were edible. The bread was fresher, although I'm still tempted to say it's store-bought. While my salad lettuce was more chewy than crunchy, they did bring me the dressing on the side, as I requested. My main dish was fettucini with chicken in a carbonara sauce. The chicken was slightly overdone, but the pasta was cooked quite well; however, the carbonara was ... interesting. Ostensibly, it had pancetta; however, the taste and texture was far more reminiscent of slightly soured bacon or aging Spam. Ironically, even with the melange of flavors, everything was exceptionally bland, and I wound up using far more salt and pepper than I prefer to get some flavor into the dish. Our waitress, while pleasant, was exceptionally slow: she had three tables with two patrons each in her section, and all were kept waiting.&lt;br /&gt;&lt;br /&gt;Ultimately, it's unlikely that I'll return any time in the near future. I want to support my friends, but I prefer to support restaurants that know what good food is, how to prepare it, and both how and when to serve it. It's also used in Asian, Caribbean, and Latin American cooking. We, as the diners, expect certain behaviors from all levels of the establishment we patronize; and, in return, they expect our return custom, our word of mouth referrals to our acquaintances, and payment for the meal.&lt;br /&gt;&lt;br /&gt;And yes, call me old-fashioned, but tipping is--and should remain--optional.&lt;br /&gt;&lt;br /&gt;I've worked as a table busser, a dishwasher, a host, a waiter, and a line cook, and they all have their ups and downs. Each plays upon the other's strengths, and balances the weaknesses. For example, a dishwasher setting out a tray of unwashed plates can be counteracted by a sharp-eyed line chef sliding them aside and grabbing clean ones. As well, the disquiet noted when a busser forgets to crumb a table can be offset by the host addressing the issue before seating the patron. All things being equal, though, whether discussing a chain or a sole proprietorship, a restaurant is known for two things: the quality of its food and its wait staff.&lt;br /&gt;&lt;br /&gt;I am willing to accept a reasonable delay for a good meal. If my server checks in with me at reasonable intervals to advise me that my dish is being prepared, or to ask if I need more wine or bread, I'll happily chat with my friends or read a book whilst waiting. And, if the food is not cooked to my liking when I receive it, I have no qualms about politely requesting that it be returned to the kitchen for further preparation.&lt;br /&gt;&lt;br /&gt;I like my steaks blue-rare, and I will return them if they're served medium-well. I prefer my eggs over medium, and I loathe receiving them over easy. And, in most instances, the wait staff is perfectly ready to address my concerns.&lt;br /&gt;&lt;br /&gt;But in some cases, I'm torn. There are some establishments I patronize where one or two servers always leave me frustrated. The food is exceptionally good, but I inevitably wind up either leaving unsatisfied or requesting to be seated in a different waitperson's section. Then, too, no matter how good the wait staff, if the food is not up to my standards, I don't patronize the establishment.&lt;br /&gt;&lt;br /&gt;If we are patrons, then it is our right to expect professional service and good food; and, if we are working in the service sector, it is our responsibility to provide both items. Conversely, if we are in the service sector, it is our right to expect customers to treat us professionally and to pay us what we are owed, and it is our responsibility as patrons to meet both of those expectations.&lt;br /&gt;&lt;br /&gt;The service industry thrives on the social dynamic, and nowhere is this more obvious than when dining out.&lt;br /&gt;&lt;br /&gt;So returning to my point about tipping above, if your server does a reasonable job, provide them with a reasonable tip. If they are oustanding in their interaction, show your appreciation in a tangible manner. Hailed as the father of American gastronomy, he left a legacy as rich as his cooking.&lt;br /&gt;&lt;br /&gt;One of his best-known works, &lt;a href="http://www.amazon.com/Beard-Food-Recipes-Kitchen-American/dp/1596914467/ref=pd_bbs_sr_1/105-1972818-9818062?ie=UTF8&amp;s=books&amp;qid=1193355909&amp;sr=8-1" target="_blank"&gt;&lt;u&gt;Beard on Food&lt;/u&gt;&lt;/a&gt;, has been re-released. First published in 1974, it has been dusted off and given a new jacket for 2007, but its recipes and lessons are as timelessly perfect today as when they were first penned.&lt;br /&gt;&lt;br /&gt;I grew up reading his books, and hoping beyond hope that--one day, somehow--I'd have the opportunity to learn from him. Alas, he died the year I left home for college, but he still teaches through his books, and through the skills he imparted to others.&lt;br /&gt;&lt;br /&gt;And there's one other element I love about him: he grew up in Portland, Oregon, and many of his recipes and reminiscences hearken back to his time here.&lt;br /&gt;&lt;br /&gt;If you purchase one book on the art of cooking this year, make it &lt;u&gt;Beard on Food&lt;/u&gt;. Luckily, relief is just a kitchen away.&lt;ul&gt;&lt;li&gt;Separate one to two pounds of chicken wings into their three constituent components (mini-drumstick, mini-thigh, and 'what in the dickens do I do with this fiddly bit?'): feel free to reserve the tips for stock by freezing them.&lt;/li&gt;&lt;li&gt;Place the remaining pieces into a mixing bowl, then make a marinade of one lime's worth of juice, four cilantro leaves chopped fine, a pinch of salt, and a splash of dry sherry. Gently toss the chicken in this marinade, then let sit--covered, in the refrigerator--for at least one hour, turning occasionally to ensure the chicken is coated evenly.&lt;/li&gt;&lt;li&gt;Place two to three tablespoons of olive oil into a small stock pot and place on a burner set to medium heat. Once the oil is hot, remove the chicken from the marinade and place into the pot, turning regularly, and cook until the chicken is done through.&lt;/li&gt;&lt;li&gt;While the chicken is cooking, mix 1/3 cup soy sauce, 1/3 cup dry sherry, two tablespoons casters sugar, 1/2 teaspoon grated ginger, and two tablespoons tomato paste.&lt;/li&gt;&lt;li&gt;Remove the chicken from the pot, remove the oil from the pot (wipe up any excess), and return the wings to the pot.&lt;/li&gt;&lt;li&gt;Once the chicken is back in the pot, pour the sauce over the wings. In order to keep the robust flavor of the pepper while moderating the heat, I roast and skin the peppers; then, depending upon the recipe, I de-seed and/or de-vein the pepper before using it.&lt;ul&gt;&lt;li&gt;Take whole peppers (Chipotle, Banana, Jalapeño, or what have you) and place them on a wire grill rack over a barbeque grill, gas flame, or electric barbeque. If you do not have any of those available, you can pan-blacken them in a nonstick or cast-iron skillet, or you can place them on a baking tray under the broiler in your oven.&lt;/li&gt;&lt;li&gt;Turn the peppers frequently and watch the roasting process carefully: you want them hot through, with their skins crisping and blistering away from the flesh beneath, but you don't want to burn the actual flesh of the peppers.&lt;/li&gt;&lt;li&gt;Now remove the peppers from the heat and place them in a sealed plastic bowl or inside a lined paper bag and let them cool for approximately twenty minutes.&lt;/li&gt;&lt;li&gt;Wearing gloves (latex or latex-free), strip the skin from the flesh of the pepper. The gloves protect your hands from volatile oils, and they facilitate the removal of the pepper skins.&lt;/li&gt;&lt;/ul&gt;Simple, yes?&lt;br&gt;&lt;br&gt;If you want to retain the heat in the pepper, remove only the stem. To moderate the heat, open the pepper and remove the seeds, leaving the veins. According to &lt;a href="http://www.stonepages.com/news/archives/000498.html" target="_blank"&gt;Archaeo News&lt;/a&gt;, drawing on information published in &lt;u&gt;The Independent&lt;/u&gt; in 2003, "New discoveries show how Neolithic man was busy making red wine in Shulaveri (Georgia, the former Soviet republic). Although no liquid wine from the period has survived, scientists have now found and tested wine residues discovered on the inner surfaces of 8,000-year-old ceramic storage jars."&lt;br /&gt;&lt;br /&gt;Trust me: if we're still trying to perfect wine production after 8,000 years, it's perfectly acceptable for both you and me to be somewhat unsure of what we like to drink, and why we like to drink it.&lt;br /&gt;&lt;br /&gt;I'll admit it: I'm a red wine person myself. I've found very few whites that suit me. One of my closest friends, however, prefers whites, and finds almost all reds to be both too astringent and too robust. Every person will have their own tastes, their own preferences, &lt;i&gt;and nobody is wrong&lt;/i&gt;.&lt;br /&gt;&lt;br /&gt;Do not ever--&lt;i&gt;ever&lt;/i&gt;--let someone tell you that your choice is absolutely incorrect.&lt;br /&gt;&lt;br /&gt;If you're in a restaurant and you wish to order a Pinot Gris to go with your pot roast, do so. If you want to order a Shiraz with your fish and chips, feel free. And if you want to order Sauternes with your onion rings, knock yourself out. If that's what you want, if that's what you like, then go for it.&lt;br /&gt;&lt;br /&gt;Now, there's a caveat to that: don't stick with what you've had in the past simply because you're afraid to try something else.&lt;br /&gt;&lt;br /&gt;You may have a friend who loves reds, and you don't want to disappoint them: don't let that be your guide. By the same token, you may have a friend who hates reds, and has told you how horrid they are: don't let that frighten you off.&lt;br /&gt;&lt;br /&gt;It's my belief that you should try a little of everything, and find out what &lt;i&gt;you&lt;/i&gt; like. All of the critics in the world--whether they're using a 20-point system from France or a 100-point system in the United States--can only tell you what &lt;i&gt;they&lt;/i&gt; like.&lt;br /&gt;&lt;br /&gt;Go to wine tastings, visit vineyards, pick up some books or magazines on wine, browse the web, or ask your Sommelier or server what s/he would recommend with your meal.&lt;br /&gt;&lt;br /&gt;Many people think nothing of going to a tavern and trying a flight of beers to find the general type they like the best (for me, it's stouts and porters, and that may tie in with why I prefer the punch of red wines), but they're afraid of being seen as "hoity-toity" if they do the same with a wine flight at their local wine store.&lt;br /&gt;&lt;br /&gt;Don't be afraid, don't be off-put, and above all, don't be intimidated: wine is nothing more than grape juice with attitude. &lt;br /&gt;&lt;br /&gt;Speaking of what you shouldn't do, you shouldn't let yourself be confused over the rather frequent divide between what you smell and what you taste.&lt;br /&gt;&lt;br /&gt;I can tell you that a noteworthy Sauvignon Blanc has a nose redolent with a musk that's both sharp and acrid, and a subtle blend of dusty herbs, sunlight on shag carpet, green peppers, asparagus, and slightly soured beans. You might sniff the same glass, recoil, and say that it stinks of an athlete's armpits and cat urine. We'd both be noticing the same things: we're experiencing the distinctive characteristics of a particular grape, winery, method of production, and finished product for a given year.&lt;br /&gt;&lt;br /&gt;Incidentally, that particular Sauvignon Blanc may be one of the best tasting wines you've ever had in your life; however, until you try it, you'll never know.&lt;br /&gt;&lt;br /&gt;And don't let wine terminology confuse you: you need to know hardly any of it to appreciate wine. If you do opt to learn it, you'll be able to read a series of reviews and envision how a given wine will taste, but that's still not the same as tasting it for yourself.&lt;br /&gt;&lt;br /&gt;I'll admit it: it's nice to be able to say that the 2006 Calina Cabernet Sauvignon from Chile pours like dusty garnets, has an old ruby meniscus, is eminently approachable in its youth, is comfortably able to be cellared for another five years, is fairly leggy, has a nose reminiscent of cold October nights and sweet graveyard dirt, is chewy with tannins, is reasonably astringent, has an acceptably long and complex finish without dissolving into acidity, and carries hints of pear, cheddar, and chocolate.&lt;br /&gt;&lt;br /&gt;You know what else is nice, though? Northwood</name><uri>http://www.blogger.com/profile/12406717355407210054</uri><email>noreply@blogger.com</email><gd:image rel='http://schemas.google.com/g/2005#thumbnail' width='21' height='32' src='http://4.bp.blogspot.com/_trmAYCKWpTc/SQ5hiqKxQVI/AAAAAAAAAKI/tywbkamt3PE/S220/_MG_3504.jpg'/></author><thr:total>0</thr:total></entry><entry><id>tag:blogger.com,1999:blog-4022135323507495764.post-5267227092496416940</id><published>2007-10-01T07:38:00.000-07:00</published><updated>2007-10-03T02:12:44.699-07:00</updated><title type='text'>Conventions</title><content type='html'>There's something you need to know about me: I'm a heathen when it comes to food preparation and dinner parties.&lt;ul&gt;&lt;li&gt;I don't &lt;i&gt;chifonnade&lt;/i&gt;, and I hardly ever &lt;i&gt;julienne&lt;/i&gt;, but I do like to make sure my herbs are sliced into ribbon-thin strips, and that my vegetables are cut into matchstick-sized pieces.&lt;/li&gt;&lt;li&gt;I don't &lt;i&gt;brunoise&lt;/i&gt; leeks, but I have been known to finely dice them.&lt;/li&gt;&lt;li&gt;While I could set up a fairly complete &lt;i&gt;mise en place&lt;/i&gt; for each meal I'm preparing, I prefer to get out what I need before I start cooking, then put it away when I'm done.&lt;/li&gt;&lt;li&gt;I don't always prepare elaborate &lt;i&gt;Hors d'ouvres&lt;/i&gt; to serve to my guests before we sit to supper; instead, I set out a few simple appetizers, and we amuse ourselves with light-hearted, and hopefully witty, badinage.&lt;/li&gt;&lt;li&gt;While I know how to set a formal table, I usually lay out only what the meal will require.&lt;/li&gt;&lt;/ul&gt;Here's the point: while I know how to prepare, plate, and present just about anything, I'd prefer to focus on my guests, and not on making sure they know the correct technical term for each step of the preparation, or that they're using the correct utensil for each course. If we're in the kitchen together and someone truly wishes to help, I don't want to explain the difference between coarse and fine chop, dicing, mincing, and julienning: I'd rather hand them a knife and say, "see how those carrots are cut? Do that to the zucchini."&lt;br&gt;&lt;br&gt;And when it comes to serving and eating, while I enjoy setting out grilled Tilapia on bone china with linen serviettes at every place, I also enjoy sitting down at a friend's house to barbequed beef ribs on plastic plates, especially when they're providing a huge pile of paper napkins and handy wipes to clean off fingers and chins.&lt;br&gt;&lt;br&gt;When all is said and done, food is about life, life is about laughter, and laughter is a part of love. Northwood</name><uri>http://www.blogger.com/profile/12406717355407210054</uri><email>noreply@blogger.com</email><gd:image rel='http://schemas.google.com/g/2005#thumbnail' width='21' height='32' src='http://4.bp.blogspot.com/_trmAYCKWpTc/SQ5hiqKxQVI/AAAAAAAAAKI/tywbkamt3PE/S220/_MG_3504.jpg'/></author><thr:total>0</thr:total></entry><entry><id>tag:blogger.com,1999:blog-4022135323507495764.post-6089712153972330470</id><published>2007-10-01T07:19:00.000-07:00</published><updated>2007-10-13T09:51:58.831-07:00</updated><title type='text'>Warm Pasta Salad</title><content type='html'>I had always enjoyed my mother's summery macaroni salad--heavy with cheese and slices of hard-boiled egg, swimming in a sea of mayonnaise and thick yellow mustard--but I wanted something lighter and more refined for my table, so I started experimenting.&lt;br&gt;&lt;br&gt;I found that this recipe works quite well served warm and paired with a gamier meat such as duck, and is delicious cold when paired with a slice of pork loin.&lt;ul&gt;&lt;li&gt;one quarter of a red onion, approximately one-eighth cup, coarsely chopped&lt;/li&gt;&lt;li&gt;six to eight cloves of garlic, depending on their size, finely minced&lt;/li&gt;&lt;li&gt;one-quarter cup mayonnaise&lt;/li&gt;&lt;li&gt;one-half teaspoon mustard powder&lt;/li&gt;&lt;li&gt;one teaspoon grated horseradish &lt;/li&gt;&lt;li&gt;eight ounces dry miniature shell pasta&lt;/li&gt;&lt;li&gt;one small sweet red bell pepper &lt;/li&gt;&lt;/ul&gt;&lt;blockquote&gt;&lt;font size="1"&gt;&lt;i&gt;Note: if you feel this dish to be too pungent with the horseradish and garlic, you can sweeten it by reducing the horseradish to one-half teaspoon and the garlic to no more than four cloves, and then adding one-quarter teaspoon of salt.&lt;br&gt;&lt;br&gt;A word of caution, however: if you opt to use a salad dressing or sandwich spread as opposed to mayonnaise, it may well throw off the balance of flavors.&lt;/i&gt;&lt;/font&gt;&lt;/blockquote&gt;&lt;ul&gt;&lt;li&gt;Roast the pepper, then skin it. Remove the seeds and veins, then slice into one-quarter inch wide strips. Slice those strips into one inch long sections.
